The Nyaminz story
A kitchen with island roots.
We didn't set out to run a food truck. We set out to cook the food we missed β and Fort Wayne showed up for it.
Nyaminz was born from a simple want: real Jamaican food in Fort Wayne. The kind of jerk that smokes for hours over pimento wood, the kind of curry goat that falls off the bone, the kind of escovitch fish that snaps and sings with vinegar and pepper.
What started as cooking for friends turned into a truck, and the truck turned into the island kitchen of northeast Indiana. We're small, we're family-run, and we cook everything fresh β no shortcuts, no shortcuts on the spice either.
Today we cater weddings, corporate lunches, grad parties, and festivals across the region. But the heart of it is the same as day one: a grill, a recipe, and people we want to feed.

Family-owned & operated
The team behind every plate, smoker, and event across Fort Wayne
What we cook by.
01
Real pimento wood
We smoke jerk the traditional way β over pimento, the only wood that gives it that sweet, peppery smoke.
02
Cooked to order
Nothing sits under a lamp. Catering is plated fresh, on-site when we can, hot when we deliver.
03
Feeding community
We're a family kitchen first. Every event is a chance to put a little island on someone's table.
